50 ml Barentsz Gin
50 ml Pineapple juice
25 ml Orgeat syrup
25 ml Lemon juice
Muddle celery (1 inch) in a glass and add in all above ingredients. Shake together and double strain into a highball glass over crushed ice. Garnish with a sprig of mint and an apple slice.
