RANCH DRESSING

200ml crème fraîche
150g mayonnaise
1 tsp English mustard powder
½ tsp smoked paprika
1 tbsp chopped flat-leaf parsley
1 tbsp chopped coriander
1 tsp sweet chilli sauce
Sea salt and freshly ground pepper

Mix all of the ingredients together in a bowl. Season with salt and black pepper. Keep chilled in the fridge.

BASIC VINAIGRETTE

360ml olive oil
40ml extra virgin olive oil
60ml white wine vinegar
10ml sherry vinegar
¼ tsp agave syrup
Sea salt and freshly ground pepper
1 bay leaf and a couple of sprigs of thyme and tarragon (optional)

Whisk together all of the ingredients and season to taste. The dressing can be used straight away; however, if you add the bay leaf, thyme and tarragon sprigs to the vinaigrette, once made store it at room temperature for up to 1 week to allow the herb flavours to infuse into the dressing.

WALNUT VINAIGRETTE

3 tbsp white wine vinegar
2 tbsp walnut oil
80ml olive oil
3 sprigs of thyme

Put all the ingredients in a bowl and whisk together, allowing the thyme to infuse the vinaigrette. Remove before using. Always whisk or shake before use to ensure the mix has emulsified properly.

Zest and juice of 1 lemon
100ml olive oil
1 tsp white wine vinegar
½ tsp agave syrup
