Michelin-starred restaurant Marcus is looking for a passionate Sous Chef to be part of our award-winning team from January 2023 onwards.

As one of London’s most acclaimed restaurants, Marcus delivers Michelin-starred cooking in a relaxed, contemporary space. We are passionate about supporting and employing the next generation of talent and are led by an ambassador for British cooking, Marcus Wareing.

Joining a talented and creative kitchen team you will be an integral part of the continued success of the restaurant. You will be joining a team led by Craig Johnston, 2022 Acorn Award winner.

What you will be doing as a Sous Chef:

  • Assisting the Head Chef in all aspects of the kitchen operations
  • Supervising the kitchen team and working on their professional development
  • Ability to take charge of every section in the kitchen
  • Preparing, cooking and presenting our dishes to Michelin-star standard
  • Working to highest standard of food hygiene, health and safety
  • Monitoring portion and waste control to maintain profit margins
  • You will be contracted to work 60 hours per week over 5 days

What we are looking for in a Sous Chef:

  • Experience in a similar role in a Michelin star environment
  • A passion and creativity for fresh food and British produce
  • Ability to perform under pressure

  • Previous restaurant experience as a Sommelier or Waiter
  • WSET qualified or working towards it

What you’ll be doing in the role:

  • Deliver an exceptional service to ensure guests have a memorable experience
  • Engage appropriately with guests to ensure they understand what wines we offer and make recommendations to suit their tastes and menu selection
  • Master various sales techniques to ensure our guests need are anticipated
  • Develop your knowledge of wines and wine making
  • Ensure all wines used are recorded as part of stock control

We are looking for a passionate chef or a chef with a love for producing great food and a hunger to learn.

What we’re looking for in a Commis Chef:

  • A strong passion for the kitchen, fresh produce and working in a team
  • A great attitude with a willingness to learn and the hunger to develop their skills
  • Ideally some experience of working to specs
  • The ability to work well under pressure
  • Good attention to detail
  • A great personality – fun, passionate, charismatic, enthusiastic, people-focused and adaptable to all personalities
  • A good command of English and proof of eligibility to work in UK
  • Previous experience in a similar role would be advantageous

What you’ll be doing as a Commis Chef:

  • Assisting the chef de partie and demi-chef de partie in the running of the kitchen
  • Preparing, cooking and presenting all our dishes to Michelin star standard
  • Working on seasonal recipes
  • Developing your knowledge including knife skills, preparing meat and fish and following recipes
  • Maintaining the cleanliness of the kitchen to the highest level, as part of the team
  • Working to the highest standard of food hygiene and health and safety
  • You will work 60 hours per week over 4 or 5 days

We are looking for someone to join our front of house team, supporting the seamless running of the restaurant by providing a highly efficient and effective service, ensuring standards are maintained and guests’ needs are anticipated.

What you’ll be doing in the role:

  • Welcoming guests, assisting them and seeing to their needs
  • Deliver an exceptional service to ensure guests have a memorable experience
  • Engage appropriately with guests, seating them at the appropriate table and communicating all requests and booking notes to the rest of the team
  • Ensure all reception duties are fulfilled, including answering the phone and emails
  • Making and updating reservations and allocating them to a suitable table accordingly
  • Monitoring email inbox during the shift and handling guest requests in a timely and professional manner
  • Participate in training and development to maintain and increase knowledge
  • Work effectively and flexibly with other team members, contributing to the overall success of the front of house team
  • You will be working around 30 hours per week, Tuesday to Saturday

What we’re looking for:

  • Previous restaurant experience in London
  • Excellent communication skills, both via email and telephone, with good attention to detail
  • Ability to engage with guests, ensuring a positive first and last impression of the restaurant
  • Ability to arrange reservations in a professional, efficient manner
  • Outgoing personality with a passion to deliver
  • Enthusiastic, quick thinking with a can-do attitude
  • Knowledge of the reservations platform SevenRooms
  • Experience with Collins & OpenTable will be beneficial but not essential as full training will be given
  • Must be available to work evenings and weekends

Success Stories

Rishi Patel, sous chef at Marcus Belgravia

Rishi

Hailing from Wembley, north-west London, Rishi joined Marcus as a kitchen porter in 2017 after leaving university. Soon enough, his passion and drive was recognised by the senior chefs and he moved into a commis chef position. Over the last five years, he’s worked his way up and around the kitchen and is now our brilliant Sous Chef.

Kentin


A French native, Kentin moved to London in September 2020 with the aim of improving his English. He joined the Marcus Wareing family at the now-closed The Gilbert Scott as a kitchen porter, and after lockdown, moved over to Marcus Belgravia. Soon enough, Kentin retired the rubber gloves and green apron to first become a commis waiter and now, waiter. His commitment to five-star service and exceptional knowledge of our menu makes him an incredible asset to our team.

Lise

As one of our longest-standing team members, Lise has done it all in Operations. Her first role in the Marcus Wareing family was as a Head Waitress at The Gilbert Scott, way back when it opened in 2011. The year after, she joined the Marcus reservations team and graduated First Class BA (Hons) in International Hospitality Management.

After graduation, she joined the team at The Five Fields, before returning to the fold as the Guest Relations Manager at Tredwells when it opened in 2014. From there, it was a natural progression to Operations, first as a manager and now as our wonderful Director!
