Commis Sommelier

Michelin-starred restaurant Marcus is looking for a Commis Sommelier, or someone with other front of house experience ready to learn more about the world of wine, who wants to be part of our award-winning team.

We are looking for someone to join our sommelier team, supporting the seamless running of the restaurant by providing a highly efficient and effective wine service, ensuring standards are maintained and guests’ needs are anticipated.

— Previous restaurant experience in any FOH role
— Keen to work towards a WSET qualification

What you’ll be doing in the role:
— Support the Head Sommelier and his team in the day to day running of the department
— Engage appropriately with guests to recommend and serve suitable wines
— Ensure all wines used are recorded as part of stock control
— Participate in training and development to maintain and increase knowledge
— Cellar management and organisation including monthly stocktaking

Recruitment Administrator

Michelin-starred restaurant, Marcus, is looking for a dedicated Recruiter who wants to be part of our award-winning team.

We are looking for someone to join our Head Office team, supporting all departments by fulfilling their recruitment needs and ensuring our new starters’ onboarding journey is seamless and welcoming.

This is a full-time role, working Monday to Friday.

What we are looking for in our recruitment administrator:

— To be an ambassador of the culture of Marcus Wareing Restaurants
— Previous recruitment or HR experience in a restaurant or hotel environment
— Great people service skills and attention to detail
— Understanding of restaurant staffing structures
— Sound knowledge of the recruitment process
— Strong written and oral communication skills
— A basic understanding of employment regulations

What you’ll be doing in the role:

— Advertise all open roles as agreed with the Head of Departments and Operations Director
— Proactively search for the best candidates for the open roles
— Screen prospective job applicants over the phone and in person to evaluate their skills and qualifications
— Schedule and manage all interviews and trial shifts in coordination with the heads of departments
— Evaluate candidates’ performances during their second stage interview or trial shifts
— Keeping all employee records, contracts, payroll information and right to work documents up to date
— Lead the onboarding journey for all new employees

Receptionist (Part-time)

What you’ll be doing in the role:
— Be the first impression of our restaurants to all guests arriving
— Deliver an exceptional service to ensure guests have a memorable experience.
— Engage appropriately with guests, seating them at the appropriate table and communicating all requests and booking notes to the rest of the team
— Ensure all reception duties are fulfilled, including answering the phone and emails.
— Participate in training and development to maintain and increase knowledge.
— Work effectively and flexibly with other team members, contributing to the overall success of the front of house team

Butcher

Michelin-starred restaurant Marcus is looking for a Butcher to join our kitchen team.

Joining a talented and creative kitchen team you will be an integral part of the continued success of the restaurant. This role is four days a week (Tuesday-Friday), working 7:30am-5pm (approximately)

What we are looking for:
— Butchery experience working with high-quality meat and products or an experienced chef looking to further develop their butchery skills.
— Knowledge of meat preparation techniques and cuts
— Ability to safely use knives and butchery tools
— A great attitude with a willingness to learn and the hunger to develop their skills
— A great communicator – excellent at developing relationships with the team and others involved

What you will be doing as our Butcher:
— Receive, inspect, and store meat upon delivery
— Cut and debone various meat, poultry and game
— Marinate and cure of meat and fish using wet and dry cures and brines
— Assist with basic prep of the meat and fish sections
— Store meats in refrigerators or freezers at the required temperature, ensuring appropriate stock rotation
— Daily and monthly stock counts
— Ensure high standards of food hygiene and the rules of health and safety are adhered to.
