Sous Chef

Joining a talented and creative kitchen team you will be an integral part of the continued success of the restaurant. You will be joining a team led by Craig Johnston, 2022 Acorn Award winner.

What you will be doing as a Sous Chef:
— Assisting the Head Chef in all aspects of the kitchen operations
— Supervising the kitchen team and working on their professional development
— Ability to take charge of every section in the kitchen
— Preparing, cooking and presenting our dishes to Michelin-star standard
— Maintaining cleanliness of kitchen to highest level
— Working to highest standard of food hygiene, health and safety
— Monitoring portion and waste control to maintain profit margins
— You will be contracted to work 60 hours per week over 5 days

What we are looking for in a Sous Chef:
— A passion and creativity for fresh food and British produce
— Experience in a similar role with fine dining cuisine
— Ability to perform under pressure
— An enthusiastic leader, able to genuinely inspire others by example
— Enthusiasm and quick thinking, with a can do attitude
— Organised, tidy and highly attentive to detail
— Act as a point of contact and support for the commis chefs
— A good command of English as a base requirement

Demi Chef de Partie

We are looking for a passionate chef or a chef with a love for producing great food and a hunger to learn. You will be joining a team led by Craig Johnston, 2022 Acorn Award winner.

What you’ll be doing as a Demi Chef de Partie:

— Assisting the chef de partie in the running of a busy section
— Preparing, cooking and presenting dishes within a speciality
— Maintaining the cleanliness of the kitchen to the highest level, as part of the team
— Working to the highest standard of food hygiene and health and safety
— Monitoring portion and waste control to maintain profit margins

What we’re looking for in a Demi Chef de Partie:

— A strong passion for the kitchen, fresh produce and working in a team
— A great attitude with a willingness to learn and the hunger to develop their skills
— The ability to work well under pressure
— Good attention to detail
— A great personality – fun, passionate, charismatic, enthusiastic, people-focused and adaptable to all personalities
— A great communicator – excellent at developing relationships with the team and others involved
— A good command of English and proof of eligibility to work in UK
— Previous experience in a similar role would be advantageous

Restaurant Manager

We are a small and friendly team who thrive on a passion for fine food and wine and exceptional customer service. We know that our restaurant is defined by our people, so we are dedicated to investing in your long-term career development and success, equipping you with all the tools to progress professionally. 

We are looking for someone to join the restaurant team, supporting the seamless running of the restaurant by leading the front of house team with the aim to reach our two Michelin star goal.

What we are looking for:

  • To be an ambassador of the culture of Marcus Wareing Restaurants
  • Previous management experience in a Michelin or fine dining restaurant
  • Great customer service skills and attention to detail
  • Excellent knowledge of food and beverage
  • Passionate about providing a fantastic dining experience for our guests
  • A strong leader that can inspire and educate our front of house team
  • A natural people manager that thrives from leading their team’s professional growth
  • Enthusiastic, quick thinking with a can-do attitude
  • Experience of using Micros, SevenRooms and Excel
  • Strong written and oral communication skills 

 

What you’ll be doing in the role:

  • Lead our team to deliver an exceptional service to ensure guests have a memorable experience
  • Engage appropriately with guests to anticipate their needs and exceed expectations
  • Accountable for the day to day revenue figures and billing
  • Responsible for training and development to maintain and increase knowledge of our menu, allergens, health and safety and service standards
  • Work effectively and flexibly along the Restaurant Director  to guarantee the restaurant’s success
  • Develop each front of house staff member and push them to fulfil their potential
  • Communicate efficiently with the reservations and events team to maximise opportunities
