Head Waiter

Michelin-starred restaurant Marcus is looking for a passionate Head Waiter who wants to be part
of our award-winning team.

As one of London’s most acclaimed restaurants, Marcus delivers Michelin-starred cooking in a
relaxed, contemporary space. We are passionate about supporting and employing the next
generation of talent and are led by an ambassador for British cooking, Marcus Wareing and his
Chef Patrons, Mark and Shauna.

We are very lucky to have access to one of the city’s finest wine lists, which our Wine Director has
spent the better part of a decade building.

We are looking for a Head Waiter to join our restaurant team, supporting the seamless running of
the restaurant by providing a highly efficient and personalised service, ensuring standards are
maintained and guests’ needs are anticipated. Do you have what it takes?

What we’re looking for:

  • Strong interest in food and wine
  • Real passion to deliver the highest levels of service
  • Previous restaurant experience as a Senior Waiter or Head Waiter
  • Flexible and proactive attitude
  • Outgoing personality with a natural passion to interact with fellow colleagues and our guests
  • Enthusiastic and able to genuinely inspire others by example
  • A strong command of English
  • Full awareness of current legislation regarding hygiene, allergen and licensing laws as they apply to the restaurant

What you’ll be doing in the role:

  • Deliver an exceptional service to ensure guests have a memorable experience
  • Lead and take full ownership of a section of the restaurant during service
  • Engage with guests to ensure they are exceptionally looked after and their needs are anticipated
  • Have a thorough knowledge of all menu offerings and be able to deliver and provide the guest with that information
  • Work effectively and flexibly with other team members, contributing to the overall success of the restaurant team

Sommelier

We are very lucky to have access to one of the city’s finest wine lists, which our Wine Director has spent the better part of a decade building. We are looking for someone to join his team, supporting the seamless running of the restaurant by providing a highly efficient and effective wine service, ensuring standards are maintained and guests’ needs are anticipated.

What we’re looking for:

  • Strong interest in food and wine
  • Real passion to deliver the highest levels of service
  • Previous restaurant experience as a Sommelier or Waiter
  • WSET qualified or working towards it
  • Outgoing personality with a great eye for detail
  • Enthusiastic and able to genuinely inspire others by example
  • A strong command of English

What you’ll be doing in the role:

  • Deliver an exceptional service to ensure guests have a memorable experience.
  • Engage appropriately with guests to ensure they understand what wines we offer and make recommendations as required
  • Ensure all wines used are recorded as part of stock control
  • Participate in training and development to maintain and increase knowledge
  • Work effectively and flexibly with other team members, contributing to the overall success of the sommelier team
  • Monitor wine preorders for events

Restaurant Manager

Michelin-starred restaurant Marcus is looking for an experienced Restaurant Manager to be part of our award-winning team.

We are looking for someone to join the restaurant team, supporting the seamless running of the restaurant by providing a highly efficient and effective wine service, ensuring standards are maintained and guests’ needs are anticipated.

What we are looking for:

  • An ambassador of the culture of Marcus Wareing Restaurants
  • Previous management experience in a Michelin or fine dining restaurant
  • Great customer service skills and attention to detail
  • Excellent knowledge of food and beverage
  • Passionate about providing a fantastic dining experience for our guests
  • A strong leader that can inspire and educate our front of house team
  • Enthusiastic, quick thinking with a can-do attitude
  • Accountable for the restaurants’ sales and revenue
  • Experience of using Micros, SevenRooms and Excel
  • Strong written and oral communication skills

What you’ll be doing in the role:

  • Lead our team to deliver an exceptional service to ensure guests have a memorable experience
  • Engage appropriately with guests to anticipate their needs and exceed expectations
  • Accountable for the day-to-day revenue figures and billing
  • Responsible for training and development to maintain and increase knowledge of our menu, allergens, health and safety and service standards
  • Work effectively and flexibly along the General Manager and Chef Patrons to guarantee the restaurant’s success
  • Communicate efficiently with the reservations and events team to maximise opportunities

Commis Pastry Chef

If you are a passionate pastry chef or a chef with an interest in pastry ready to make a move from the hot kitchen into the pastry section, we invite you to join our team and to be an integral part of the continued success of Marcus Wareing Restaurants.

We are looking for chefs to join our brigade who have a love for producing great food, developing themselves further and a hunger to learn.

What we’re looking for:

  • Experience in a fresh food restaurant/hotel.
  • A strong passion for the kitchen, fresh produce and working in a team.
  • A great attitude with a willingness to learn and the hunger to develop their skills.
  • Ideally some experience of working to specs.
  • The ability to work well under pressure.
  • A great personality – fun, passionate, charismatic, enthusiastic, people-focused and adaptable to all personalities.
  • A great communicator – excellent at developing relationships with the team and others involved

What you’ll be doing:

  • Assisting the Chef de partie and demi-chef de partie in the running of the busy section.
  • Preparing, cooking and presenting dishes within a speciality.
  • Maintaining the cleanliness of the kitchen to the highest level, as part of the team
  • Working to the highest standard of food hygiene and health and safety.
  • Monitoring portion and waste control to maintain profit margins
